Try this recipe. My only quibble with it is that they recommend "a good cut of meat." Chicken-fried steak originated as a way to make the worst/cheapest cuts of meat palatable, especially during the Depression. Now, I don't want to argue against using good meat...I love a good steak on the broiler!...but the good stuff, IMHO, is best served unadorned except perhaps for marinating in Worcestershire sauce or similar. I'd use flank steak or round steak or such for chicken-frying...maybe sirloin if I was in a generous mood.
