I was in your spot for a long time, probably close to ~10 years.  Nothing seemed to fit.  After awhile I just gave up and stopped trying to force things and do a lot of soul searching and figuring out not only who I really was, but where I wanted to go.  I too kind of threw up my hands and said who ever is listening, I'm ready to listen to you.

Long story short:  I got drawn to Anubis and worked with him for awhile, and he eventually passed me off to Set, whom I was very nervous of and not sure I wanted to accept such a colorful and volatile deity.  But at the same time, that's kind of how my personality was already.  One night I was at a pretty bad low and said screw it.  I called up every protective energy I ever tried to work with to help reassure me and stop me from making a potentially big mistake.  And I found out Set was prefect for me on so many levels.  I think it took a fair amount of self examination, patience, and then a big ass leap of faith.  I do not think you can force this.  The gods have their own time lines and we have to do our part.  I still have a special place in my heart for Anubis and will always work with him from time to time.  Set just came into the picture in a big way and is the most correct for me right now, that could change later on, but who knows?

I'd say what you are feeling is normal and don't rush things.

A simple one could be like this...

Light a candle and some incense (if you know that a deity is connected to a certain scent, use that. If not, it's okay, too :) ).  

After that, clear your mind and open your perception and awareness. Breathe deeply, focus, and relax for a minute or two to get your mind in the right place.  Calmly invite your deity to join you around the candle and wait a few seconds; keep breathing deeply as to stay calm and centered.

Now, you can ask them or converse with them however you choose.  You could start with "*insert deity name*, I invite you into my life.  I wish to honor you and I am reaching out to speak to you."

Nothing has to be concrete though.  If you feel like doing something out of intution, by all means do it! Whatever is comfortable for you.  But ths is how I would approach a new deity.  I may even lay out some items they might like.  For Amaterasu (havn't approached her yet) I would lay out a sunstone, some sun imagery and maybe a carnelian and some charms I got from her homeland of Japan.

Speaking of some other pantheons...  Ones that are not widely worshipped in the neo-pagan community are the Japanese, Chinese and other Eastern Asian pantheons.  There's also Slavic, Lithuanian, and Finnish!

You could always forget all the buzz words/concepts of neo-paganism like Pantheon, personally connected, patron,  etc. Then just find a past religious system that defines the world close to how you define it and then get on with life with the comfort/ knowledge that there are other valid explanations for what this all is and center your beliefs on that philosophy.

I can advice firstly to understand what forms of Gods do you like in real world from all of your five senses. This is your indicators to feel the fire of one or another type of God/Goddess in reality.
It can be:
ears:
music(do you like classic, rock, chantings, folk, where too much drums or where too much fluite or violin in example), sounds like birds singing or dogs barking, realy which animal you realy like to hear... Which voices of people do you like - loud or high, rough or soft etc... Which sounds of nature do you like - is this sound of river or sound of leaves that dances in the wind on trees or it's sound of sand, that you transfer from hand to hand, is this sound of fire?
eyes:
Which colours do you like: cold or warm. Which colour is your favourite. What things do you like to see in world? Is this nature, forest, or graveyard, dungeon?
nose:
Which smells do you like, which incences, which nature smells. Is this smell of wood, or is this smell of corpse... etc. for another sences.
  When you understand which type human of you and which forms of God you are resonate you will find a name for this God... maybe you'll find it in yourselve inside, not in books or internet.
