I realise that this is a tricky one as the Celtic people really got around. 😂

So I'm gonna cast a reeaalwide net; anything from Brythonic to Gaelic is welcome.

I can only speak for the Irish texts - and there are no creation myths included. In the Leabhar Gabhala (Eireann) (Book of Invasions in modern Irish - Lebor Gabala Erenn in Old Irish) there's a list of the peoples/beings who inhabited Ireland, but there's no creation myth. The oldest version dates to around 830AD. It's not certain if there ever was a creation myth or if it was just that the Christian scribes didn't write it down.

True.  There are no creation myths in the extant lore.  However, more recent authors have written them.

One example is from Celtic Wonder Tales by Ella Young [1910], the story called "The Earth Shapers":

So it seems - I was just watching a BBC documentary series on YouTube about the Celts and it referred to this specifically.

I checked the one physical book I have in my 'library' re creation myths but unfortunately the index doesn't have terms such as 'creation', it has lists the figures from the myths by name (so I'd need to know a name or names already to look anything up).

Unfortunately there aren't any surviving texts that contain one. Peter Berresford-Ellis also made one up that occasionally pops up on the internet but it is entirely his own creation I'm afraid.
