Pumpkin Seeds: Recipes?
« on: October 29, 2011, 10:04:02 pm »
Made some the other day and they were good except that I totally over-salted them. So, to avoid future screwups, I was wondering if any of you fine folks may have a tried and true recipe / method?

My family always did 'spray lightly with oil, salt a little, put in the toaster oven, throw away the first batch because it's burnt and adjust accordingly', so I'm afraid I don't have anything that's ... well, specific.

I put salt in the soak water (you know, the water you soak them in to get all the slime off them :p ), sea salt is really good for it, put a bit more than you would sprinkle on them. Then I roast them in the oven with just a tiny bit of oil spread thin on the pan.

I've heard you can also do it in a skillet like raw sunflower seeds, but I haven't tried it.

I like mine savory so I use a little cayenne powder, and garlic to them right before going into the oven.

The soak water has salt, and sometimes hot peppers to add to the flavor. Then I turn the oven on the lowest setting and cook them at that temp. It means they take forever but, I no longer burn them to a crisp.

That's very similar to my mother's bean recipe:  'Put on a pot of beans.  Five minutes later put on another pot of beans.  When the first pot burns, take the second pot off and serve.'
