My milk boileth over: quarantine cooking misadventures
« on: May 11, 2020, 09:26:06 pm »
These days most of us are doing more home cooking than we usually would, and that's sure to lead to some incidents.  ;D

While I didn't have any milk boil over (this time), I did try the Ikea meatball recipe that made the rounds a few weeks back. It was quite tasty and simple to make ... how it compares to te restaurant version I don't know, since I usually get the salmon.

On the mishap side, I tried making chili with a can of six-bean mix. Result: I still don't like chickpeas :P

Anyone else having an interesting time in the kitchen?

My 'home cooking' is normally Swanson's "Hungry-Man", but tonight I tried my hand at making beef stew (with a few strips of diced bacon for extra fat and flavor). Actually, it didn't come out too bad; I started with the bacon in a dutch oven. After it was cooked and fat rendered I added the beef and browned it in the bacon fat, then added water to cover and a 187 ml bottle of wine and let that simmer for about 45 minutes. Then I added quartered new potatoes, diced onion, baby carrots, chopped garlic and a quarter-cup of Worcestershire sauce. Let that simmer about thirty minutes, then added two sticks' worth of chopped celery and a tablespoon of lemon juice and Tabasco and let the concoction simmer another 30 minutes.

I think between the Worcestershire, Tabasco and lemon juice I used a bit too much acid, but the result was certainly edible. Looks like leftovers for the next couple of days!

IME it's hard to mess up a beef stew :)

Recently got my hands on some whole chicken thighs (I usually get boneless, but these days I take what I can get) and saved the skins to try making schmaltz. The worst part was cleaning the pan afterward :( but I now have a little baking cup full of chicken grease. I made some fried rice with the leftover crispy bits which turned out well too. Next up: stock from the bones!

I hate my kitchen.  But I suppose that's a kind of interesting.

I bought a pack of frozen vegetable biryani because it's my favourite takeaway dish but I don't get to indulge very often (as my husband doesn't eat curry), plus it's kind of pricey.  But this stuff took twice as long to cook as it stated on the packaging and stuck really badly to my wok!  So I won't be buying that again.

Yeah, prepackaged stuff is always a gamble. And the instructions are often inaccurate too. (Did you cook it from frozen, or let it thaw first?)

A bit embarrassing for me to tell... but I was baking a chocolate cake, and actually forgot the eggs!  :o
The result was the heaviest cake EVER!, but finally edible when we broke it into pieces and threw ice-cream on it.
