I made this marvelousamazinganddelicious cake last night.

And I urge everyone to. It's. the. bomb. Even if you're not a big fan of coconut this is good; the flavor is not overpowering and is just OMNOMNOM.

ETA: I should say - I didn't use coconut cream, instead I strained coconut milk and used the more solid part and it worked great.

Nom...that does sound good. I LOVE coconut.

I keep trying to go on a diet but I'm no good at it. Problem is that I really like food.

The problem there isn't you (it's what your body needs to keep running; of course you're not good at eschewing it), it's Diet Culture.
