I likes me some cheese, and I bet there are more Cauldonites who do too! So let's share some cheese favorites and recommendations.

I keep cheddar around for everyday lunches, but I also like aged cheese like Gruyere and semi-soft cheese such as Oka. I can usually only afford to buy small pieces, but good cheese is totally worth it.

Recently I came across a cheese called Mountain Oak Gold, which is an aged Gouda with crunchy salt grains scattered through it. Totally awesome.

I also discovered Mamirolle, which is made in Quebec and is similar to Oka but with a stronger flavor IMO.

What are your favorite cheeses?

That sounds amazing!

I enjoy gouda and cheddar most.

I like cheddar that is old enough to go to school, like Balderson Heritage (5 year) (scroll down a bit) and Agropur Grand Cheddar. The Loblaws family of stores also has a very decent one - it's a 7-year-old, IIRC - under their 'President's Choice' branding.

I also like nice strong blue cheeses, though a little can go a very long way - for more 'everyday' purposes (and I mean that literally; this on toast is my usual breakfast) I like the somewhat milder and very creamy/spreadable Cambozola (link to Wiki because their own website is in German, but the latter is linked at the bottom of the Wiki page). The same people have recently come out with another version, Cambozola Grand Noir, that is even lovelier, but more expensive. (Regular Cambozola usually costs me about $9 for a wedge that lasts me roughly a week - expensive by weight, but affordable per time period.)

So PC cheddar is actually aged, not just chemically treated somehow (I sometimes wonder about mass-produced cheese). But then PC is usually pretty good when it comes to product quality.

Personally I can't stand blue cheese, but my mom loves it.

Being of Swiss descent, I'd like to ask you to be more specific! :)

Strangely, I don't care much for Emmental (the typical "Swiss cheese")

On the other hand, I do recommend if anyone gets the chance, to tryTete-de-Moine, mostly for the way it's usually served, in little curled-up rosettes.

I didn't grow up in any cheese-intensive food cultures, and it took me a while to get into it.  I like a lot of the common cheeses--a nice cheddar, or a Jarlsberg, that sort of thing.  I grew up relatively near the Tillamook dairy region, which makes really lovely versions of most of your basic US-popular cheeses, and got kind of spoiled that way.

My favorite once-a-year splurge-on-a-small-piece cheese is Shropshire Blue, though, which is sort of like Stilton and cheddar had a baby.
